    Overview

    The Assistant Executive Steward is responsible for the operations of the stewarding department which ensures the proper washing and sanitizing of kitchenwares, utensils, china, glass, and silver.  He/she reports directly to the Executive Steward and helps manage the stewarding department - ensuring that all outlet surfaces and utensils are clean and in compliance with all Health department requirements and hotel guidelines. The Assistant Executive Steward is also tasked with setting and delivering function tools and foods as well as breaking down function events as prescribed. Must have full availability and willingness to work all shifts (including days, nights, weekends, and holidays).

    Responsibilities

    • Supervise activities of stewards, pot washers, and night stewards to ensure proper utensil sanitation and storage.
    • Comply and assure compliance with all safety standards by following all safety rules and procedures.
    • Supervise and maintain the sanitation of kitchen, store rooms, hallways, dock, and equipment.
    • Maintain a high standard of cleanliness and orderliness in all kitchens, back dock, dumpster and utility work areas.
    • Keep management informed of shortage of equipment and supplies.
    • Operate the dishwashing equipment to ensure that all china, glass, and silver are cleaned thoroughly and sanitation of such is maintained.
    • Return all clean china, glass, and silver to its proper storage location using care to minimize breakage.
    • Knowledge of proper safe handling techniques for all chemicals used.
    • Report any faulty equipment to management immediately.
    • Know the location and operation of all fire extinguishing equipment.
    • Practice safe work habits at all times to avoid possible injury to self or other employees.
    • Follow the proper procedures in the breakdown, cleaning and reassembling of all kitchen equipment, as needed.
    • Follow all sanitation standards.
    • Prepare route sheets for the day.
    • Employees must, at all times, be attentive, friendly, helpful, and courteous to all guests, managers, and fellow employees.
    • Work with other F&B managers and keep them informed of F&B issues as they arise.
    • Keep immediate supervisor fully informed of all problems or matters requiring his/her attention.
    • Coordinate and monitor all phases of Loss Prevention in the steward operation.
    • Prepare and submit required reports in a timely manner.
    • Ensure preparation of required reports, including (but not limited to) Wage Progress, payroll, revenue, employee Schedules, quarterly actions plans.
    • Monitor quality of service in steward operations.
    • Ensure compliance with all local liquor laws, and health and sanitation regulations.
    • Ensure compliance with SOP’s in all outlets.
    • Ensure compliance with requisition procedures.
    • Conduct staff performance reviews in accordance with Highgate Hotel standards.
    • Understand and be able to prepare payroll and tip distribution.
    • Be involved in and/or conduct departmental and hotel training (CARE, One to One), etc.
    • Keep kitchen informed of accurate counts for plating.
    • Maintain up to date details on steward functions and communicate to supervisors.
    • Conduct ongoing training of captains/hourly employees to maintain standards of service.
    • Make personal contact with guests and assist them with any requests.
    • Ensure safety, sanitation, and cleanliness of service areas.
    • Oversee set-up assignments.
    • Ensure inspection of all steward areas for cleanliness and maintenance on a regular basis.
    • Supervise the work of stewards, and observe the performance of hourly service personnel.
    • Control and maintain all service equipment. Write service requests as necessary.
    • Ensure overall guest satisfaction.

    Qualifications

    Education & Experience:

    • High school diploma required.
    • College course in related field helpful.
    • Previous supervisory responsibility preferred.

    Physical requirements:

    • Flexible and long hours sometimes required.
    • Medium work - Exerting up to 50 pounds of force occasionally, and/or 20 pounds of force frequently or constantly to lift, carry, push, pull or otherwise move objects.
    • Ability to stand during entire shift.

    • Comply with Highgate Hotel Standards and regulations to encourage safe and efficient hotel operations.
    • Maximize efforts towards productivity, identify problem areas and assist in implementing solutions.
    • Must be effective in handling problems, including anticipating, preventing, identifying and solving problems as necessary.
    • Must be able to understand and apply complex information, data, etc. from various sources to meet appropriate objectives.
    • Must be able to cross-train in other hotel related areas.
    • Must be able to maintain confidentiality of information.
    • Must be able to show initiative, including anticipating guest or operational needs.
    • Perform other duties as requested by management
